Smoking Method: Hot Smoking/Warm Smoking

Temperature: Low to Medium

Time: Approximately 2 to 4 hours

Hot smoking or warm smoking is suitable for smoking whole chicken. The temperature should be maintained at a low to medium level. Smoking time can vary depending on the size of the chicken, but as a general guideline, it typically takes around 2 to 4 hours. Adjust the smoking time based on the size and thickness of the chicken to ensure that the inside is properly smoked.

Ingredients 

・Whole Chicken (cleaned and gutted)

・Salt and Spices (as desired)

・Smoking Chips (choose recommended wood types)

 

Instructions

① Prepare the Whole Chicken Clean the whole chicken thoroughly, remove the innards, and trim any excess fat or feathers if needed.

② Season with Salt and Spices

Rub salt and your preferred spices all over the whole chicken for seasoning. This step adds flavor to the chicken.

③ Prepare Smoking Chips

If you're using a smoker, soak the smoking chips in water for a while and then drain them. This ensures the chips burn longer during the smoking process.

④ Smoke the Whole Chicken

Place damp smoking chips. Put the whole chicken inside the smoker and close the lid. Smoke the chicken while carefully monitoring the temperature and time.

⑤ Once smoking is complete, cool the whole chicken before cooking

⑥ After smoking, you can either cool and then carve the whole chicken or use it as it is. Choose your preferred cooking method.

Smoked Chicken and Avocado Pasta Salad 

Ingredients

Smoked, finely chopped whole chicken breast

Avocado (sliced)

Pasta (your preferred type)

Salad Vegetables (Cabbage, Tomato, Cucumber, etc.)

Lemon Juice

Olive Oil

Salt and Pepper

Optional: Herbs or Spices (e.g., Basil, Parsley, Red Pepper Flakes)

 

Instructions

1. Cook the pasta according to the package instructions. Once done, rinse it with cold water to cool it down.

2. Wash and chop the salad vegetables to your desired size.

3. In a bowl, combine the cooled pasta, salad vegetables, finely chopped smoked chicken, and avocado slices.

4. Add lemon juice and olive oil, mixing gently. Season with salt and pepper. Add herbs or spices if desired. Basil, parsley, and red pepper flakes work well.

5. Mix everything thoroughly to ensure the flavors are well distributed.

6. Serve in bowls.

It's recommended to chill the pasta salad in the refrigerator before serving.

Smoked Chicken and Roasted Vegetable Salad

Smoked, thinly sliced whole chicken breast

Vegetables (e.g., Carrots, Zucchini, Bell Peppers, Onions, etc.)

Instructions

1. Smoke the whole chicken breast using a smoker. Follow appropriate temperature and time guidelines, cooking until fully done.

2. Chop the vegetables and season them with olive oil, salt, and pepper. Preheat your oven and roast the vegetables until they become tender.

3. Cool the smoked chicken and roasted vegetables, then slice the chicken breast into thin pieces.

4. In a salad bowl, arrange lettuce and your preferred vegetables. Top with the smoked chicken slices and roasted vegetables.

5. Drizzle lemon juice and olive oil over the salad, and add herbs for flavor. Season with salt and pepper.

6. Your salad is now ready to enjoy!
